Blueberries:Contains iron, phosphorous, calcium, magnesium, manganese, zinc, and vitamin K

 

RECIPE ⤵️

✘ 1 cup almond flour

✘ 1 tsp baking powder

✘ ½ tsp sea salt

✘ 1 tbsp honey

✘ 1 tbsp agave syrup or sugar free syrup

✘ ⅓ cup buttermilk or yoghurt (use coconut yoghurt for vegan option)

✘ 1 cup fresh blueberries

✘ ½ cup pistachios

✘ 1-2 tbsp coconut oil

✘ 2 tbsp flax meal

✘ 1 tsp hemp seeds

✘ 1 tsp chia seeds

✘ 1/4 tsp cinnamon

 

INSTRUCTIONS ⤵️

🌟 Pre-heat the oven to 375F

🌟 Combine flaxseed meal + 3 tbsp. water and let it stand for a few minutes.

🌟 Combine all dry ingredients (flours, salt, baking powder)

🌟 Combine all wet ingredients (honey, coconut oil, yoghurt)

🌟 Mix dry, wet ingredients and flaxseed into a liquid mixture; if it’s not liquid enough slowly add some WATER to get a pancake like consistency

🌟 Add in nuts and berries and fold into batter

🌟 Dish out mixture to about 10-12 muffin cups

🌟 Bake for 25-30 min or till tops are firm

Serving Size: 10-12 Muffins
