✘ 1 package butternut squash zoodles (or cook and chop your own cubes)

✘ 2 pre cooked beets

✘ 2 tbsp lightly salted pistachios

✘ 2 tbsp pumpkin seeds

✘ 1 tbsp olive oil

✘ Salt and pepper (to taste)

✘ 1/4 tsp pumpkin pie seasoning



🌟 Heat olive oil in a medium pan. Add in zoodles, cook for 3 minutes, add in nuts and seasonings.

🌟 Serve over arugula (optional). Top with more pie seasoning or cinnamon and beets.

Serving Size: 1-2 (depending on amount of butternut squash)
