  • 1/2 sourdough starter, bubbly and active
  • 1/2 cup water 
  • 4 cups gluten free flour OR all-purpose flour 
  • 1/2 cup melted coconut oil
  • 1/2 cup honey
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Cinnamon Sugar Filling

  • 1/2 cup softened butter 
  • 1/2 cup brown sugar OR date sugar
  • 1/4 cup local honey
  • 2 tablespoons cinnamon
  • 2 scoops DotFit vanilla protein powder

Cinnamon Icing

  • 1 1/2 cups sour cream OR greek yogurt
  • 1/2 cup local honey
  • 2 teaspoons vanilla extract
  • 1 tsp cinnamon


  1. In the bowl of a stand mixer, combine all ingredients. Mix together until smooth and glossy.
  2. Place the dough in a greased bowl and cover it with foil or plastic wrap.
  3. Allow to rest in warm place overnight, or up to 12 hours. 
  4. The next day, preheat the oven to 375 degrees.
  5. Add the dough back to the kitchen aid/mixer again or knead with your hands to freshen up
  6. In a separate bowl, combine filling mixture softened butter, brown sugar, protein and cinnamon. Stir to combine.
  7. Dust the counter with flour, and roll out the dough into a 1/4 inch thick rectangular shape.
  8. Evenly spread the cinnamon filling over the dough.
  9. Roll the dough up as tightly as you can. When you get to the end, pinch the edges or cut off the excess dough.
  10. Slice using fishing line (scoop under the dough and criss cross to slice) to make 10-12 even rolls. 
  11. Place the rolls into a lightly sprayed with avocado oil 14" cast iron skillet or baking dish.
  12. Bake at 375 degrees for 20-25 minutes then drizzle with homemade icing.
