✘ 1 pound Turkey Chorizo or Turkey Italian Sausage

✘ 10 ounce bags of frozen spinach or chopped kale

✘ 5 pastured eggs

✘ 2 tbsp extra virgin olive oil

✘ 2 garlic cloves peeled and minced

✘ 2 tbsp of minced onion or onion powder

✘ 2 tbsp Italian seasoning

✘ 1/2 tsp iodized sea salt

✘ 1/2 tsp black pepper


🌟 Heat oven to 350 degrees and line muffin tin with liners (spray with olive oil)

🌟 Cook meat in a non- Teflon fry pan until browned

🌟 Cook frozen spinach or kale in the microwave - use a cheese cloth or towel to squeeze out as much water as possible

🌟 Mix the greens with eggs, olive oil, garlic, onion, Italian seasoning, salt and pepper in a blender for 1-2 minutes until mixed thoroughly

🌟 Transfer blended mixture to a large bowl and combine with cooked meat

🌟 Fill the muffin tins (mixture will not raise much during baking)

🌟 Bake 30-35 minutes until the tops begin to brown

Serving Size: 12-14 muffins
