Oyster Mushrooms: Riboflavin, potassium, B vitamins, folic acid, magnesium, vitamin C, encourage healthy blood sugar

Garlic:Vitamin B6, selenium, vitamin c, rich in antioxidants, reduces blood sugar, reduces oxidative stress

 

RECIPE ⤵️

✘ 1 package of BBQ Tofu Cubes (pre cooked)

✘ 1/2 cup cooked white rice

✘ 1 cup shredded carrots

✘ 1 cup shredded zucchini

✘ 2 cups oyster mushrooms

✘ 1 can garbanzo beans

✘ 1 cup kimchi

✘ 2 cloves garlic or 1 tbsp minced garlic

✘ 1 cup roasted cashews

✘ 2 tbsp olive oil

✘ 1/2 tsp crushed red pepper flakes

✘ 2 tsp sesame seeds

Homemade Peanut Sauce

✘ 3 tbsp coconut aminos

✘ 1 tbsp of crunchy peanut butter or almond butter

✘ 2 tbsp sugar free maple syrup

✘ 1-2 tsp garlic sriracha

✘ 2 tsp minced garlic

✘ 1 tsp sesame seeds

✘ 2-3 tbsp water

*Mix all ingredients together*

  

INSTRUCTIONS ⤵️

🌟 In a large nonstick pan combine olive oil, red peppers, and garlic. Saute until fragrant. 

🌟 Add in carrots, zucchini, mushrooms, garbanzo beans, white rice and tofu. Let cook on low heat for 5-8 minutes.

🌟 Add in kimchi, sesame seeds, salt and pepper (to taste). Stir to mix all ingredients together.

🌟 Pour sauce over the stir fry and coat evenly.

🌟 Top with roasted cashews (recipe below), more sesame seeds and some cilantro if desired.

Roasted Cashews

Heat a small pan on medium heat with some olive oil. Add in cashews, cover and toss a couple of times until they turn brown. 

 

Serving Size: 6-8 Bowls (depending on serving size)
